Looking at the calendar of cakes next week was a huge reminder to me that graduation season is here. We kicked off the season with the University of Nebraska graduation cakes today and boy did that have us seeing red…red velvet that is! Next week appears to be the beginning of the parochial and public school graduations.

If you have a graduation cake need, please call 475-0494 as soon as possible to see if we can fit you in our calendar. We are very close to capping off the orders for the weekend of the 14th and 21st of May.

Kristin Rozsa, chef/owner of the Cup, Lincoln’s only organic tea, coffee and pastry cafe, began baking cakes over 15 years ago. Kristin’s cakes are traditionally American, with a touch of European flair and are always party-perfect. A bit of charm and the finest ingredients available, has made Kristin one of the top pastry designers in the area.

Cake by Kristin designs iconic and delightful cakes, but definitely not too sweet.

Schooled at the Culinary Institute of America in Hyde Park, New York, with a passion for sweets and pastries, Kristin’s influences range from pastry shops in Europe and Australia to the wild berries and fruits in her home state of Nebraska. Centrally located in the midwest provides the finest ingredients available, coming from local, family-owned farms and mills, which are, whenever possible, organic and sustainable produced.

Cake by Kristin shares a kitchen with her cafe, the Cup, located in the historic Bottler’s Building at 643 South 25th Street, in Lincoln, Nebraska. Daily, in the cafe, you will find an offering of seasonal cakes, cupcakes and bakery items. Advance orders are available with 24-48 hours notice.

Consultations for wedding and special occasion cakes are by appointment only, with advance notice. Drop in appointments are not easily accommodated.
